Black Cod (a.k.a. Butterfish, Sablefish)

Black cod, also known as Butterfish for its butterlike flavor, is considered a delicacy. It has white, flaky flesh and is high in natural oils, including omega-3s. This fish is caught using pots in Prince William Sound by our friend Marc. Great when baked, broiled, grilled, and smoked, but less suitable for traditional cod recipes due to its velvety texture and higher oil content.
